NIDO DI CROCCANTE (croccante nest)

You need: cumbled almonds without shells (1kg and half), as much sugar as almonds, oranges
|
|
|
|
Put a frying pan with the mixture of sugar and almonds, on a brisk fire.
|
|
|
| Mix frequently and slowly
till sugar melts and changes colour and shape : it will become brown and
liquid.
|
|
|
Put this "mush" in some small plastic bowls greesed with oil. |
|
Press on it with an orange: it will take the nest-shape. But, PAY ATTENTION : DON'T BURN
|
|
|
| When the "Croccante" (almond sweetmeat) will be cold, take it off from the bowls and it's ready to CRUNCH ! ! |
